You can; however, the texture won’t be the same. Greek yogurt is thick and provides a mousse-like texture. If you want to use regular whole milk yogurt, go for it. Just don’t expect the same results. You can make your own yogurt using a yogurt culture and slow cooker (or Instant Pot yogurt). And here’s how to turn that yogurt into Greek yogurt.

Any kind of greek yogurt works. I like nonfat greek yogurt since I count macronutrients and prefer to enjoy fat in other ways (like adding peanut butter). Kirkland brand from Costco or Stonyfield are my favorite. Whole milk greek yogurt and 2% greek yogurt also work. It’s up to you and your preference.

Sure. Most of the options at the store contain added sugars and artificial flavors. I buy a large tub of plain yogurt each week for my family (much cheaper than individual serving cups) and always have chocolate protein powder in the pantry (for smoothies or this chocolate overnight oats recipe). It makes sense from a budget and ingredient perspective to make my own chocolate yogurt. Plus, most of the store-bought options don’t have 28 grams of protein! <–I can’t name one.

To make these gluten-free chocolate chip cookies, you’ll only need a few pantry staple ingredients that are easily found in the baking aisle at the grocery store.

The main star of this recipe is almond flour, which is rich in healthy fats and protein. Almond flour is my favorite gluten free flour to bake with. It makes delicious gluten-free cookies, crisp almond flour waffles, moist almond flour banana bread and banana muffins, and the very best gluten-free pumpkin bread.

You’ll also notice that these healthy cookies aren’t made with refined sugars; just honey. The almond flour imparts a nutty flavor and natural sweetness, so lots of sugar isn’t needed.

  • 8 tablespoon butter, semi-melted
  • 1/3 cup honey (maple syrup may also work)
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups blanched fine almond flour (or almond meal)
  • 2 tablespoons arrowroot flour starch or organic cornstarch (some readers have used coconut flour instead with good results-this is used to help thicken the batter so the cookies aren’t too soft and mushy)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips or 1/2 cup mini chocolate chips (dark chocolate chips also work, but the cookies won’t be as sweet)

What is Arrowroot Starch? Arrowroot is a white, flavorless powder. It’s similar to cornstarch (without the corn) in that it thickens food. Almond flour alone can result in a soggy, dense bread. Arrowroot starch (which is paleo-friendly, gluten-free, and vegan) improves the texture of almond flour treats. Arrowroot lasts a long time. Use it to make stir-fry sauce, almond flour chocolate chip cookies, this particular recipe, almond flour waffles, and homemade foundation powder or dry shampoo.

How to Make This Almond Flour Chocolate Chip Cookie Recipe

TOOLS NEEDED

Gather your kitchen tools, first. It only takes about 5-10 minutes to prepare the cookie dough, then 12 minutes to bake this almond flour cookie recipe.

  1. Hand-Mixer or Stand Mixer (with the paddle attachment)
  2. Measuring Cups or Digital Scale
  3. Large Mixing Bowl

Preheat the oven to 350F. Line a cookie sheet (or sheet pan) with parchment paper to make clean up easier.

Step 1: Cream Butter, Honey, and Egg Yolk

In a medium-size bowl, using an electric mixer, cream together the semi-melted butter (if you’re using a microwave to melt the butter, my butter is perfect after 20-30 seconds) and honey, until well combined and creamy. Add the egg yolk, and beat for a few seconds, until the butter mixture is well combined. Finally, beat in the vanilla extract.

Step 2: Add Dry Ingredients

Add the dry ingredients to the wet ingredients and mix until combined: almond flour, starch, baking soda, and salt. Then stir in 1 cup of chocolate chips.

Step 3: Spoon onto the Prepared Baking Sheet

Use an ice cream scooper or cookie scoop to scoop the batter on a parchment-lined baking sheet. Using a cookie scooper, makes larger, bakery-size cookies (about 3-4 tablespoons of dough). Using a cookie scoop, makes smaller cookies (which requires less baking time).

Step 4: Bake Cookies

Bake the cookies for 12 minutes for large cookies (smaller cookies may require less time), until golden brown (a very light brown/golden yellow hue) and the edges appear a bit crisp. The cookies will feel and look very soft. This is typical of all baked goods when you use almond flour.

Let the cookies cool on the baking sheet (don’t transfer to a cooling rack). As the cookies cool, they will firm up, so wait until the cookies are cool (about 5-10 minutes) before enjoying one. The cookies will always be soft, but once they cool, you’ll be able to easily pick one up without it crumbling.

Pro Tips for Baking Success

What type of almond flour?

For best results, use blanched almond flour. This flour has a light texture since the almond skins are removed before grinding almonds. This flour will produce a texture and flavor more like classic chocolate chip cookies made with all purpose flour.

I’ve also used almond meal, which has a coarser texture, since the skins are left on the ground almonds. This flour will result in more of a rustic feel to the cookies, but still results in delicious cookies.

My favorite almond flour brands are Bob’s Red Mill, Anthony’s, and the almond flour sold at Costco.

Dairy-Free Version

The preferred options for making the best cookies without dairy are: vegan butter, palm shortening, or softened virgin coconut oil.

Egg-Free Version

I haven’t personally made this recipe without eggs, but some readers have experienced great results using a flax egg. A binder is needed to keep the cookies from falling apart, which is why the egg yolk is added, and a flax egg would work in a similar way.

Don’t Use Other Flours (Wheat, Einkorn, Etc.)

I’m oftentimes asked if my almond flour recipes can be made with oat flour, wheat flour, einkorn flour, or all-purpose flour. The answer: No. Almond flour requires specific wet to dry ingredient ratios. You can’t substitute another flour in place of almond flour. Instead, use my einkorn chocolate chip cookie recipe if you’d like a wheat-based, traditional cookie.

How to Store

I rarely need to store the cookies because no cookie is ever left behind for the next day (they’re seriously the very best almond flour cookies).

If you do have some leftovers, or want to make the cookies in advance and enjoy later, store the cookies in an airtight container (or cookie jar) on the counter, at room temperature, for up to 2 days. Or in the fridge for up to 1 week. Or place the cookies in a freezer bag (a Ziplock bag) and store in the freezer for up to 3 months.

Semi-soft butter means that half of the butter is melted and half is soft, but still in a solid state. I know this sounds crazy, but it’s worked really well in this recipe. I’ve used both salted and unsalted butter in this recipe without issue. 
Weigh the flour. There is one thing that you need for fail-proof baking: a scale. Well, actually, two things: a scale and quality ingredients. My cup of flour is not the same as your cup of flour. Not weighing flour may result in disappointment when making cookies, cakes, or quick breads. Plus, weighing ingredients is much easier; just keep adding ingredients to the bowl until the scale tells you to stop. I’ve been using this digital scale for a few years now.

What is Arrowroot Starch? Arrowroot is a white, flavorless powder. It’s similar to cornstarch (without the corn) in that it thickens food. Almond flour alone can result in a soggy, dense bread. Arrowroot starch (which is paleo-friendly, gluten-free, and vegan) improves the texture of almond flour treats. Arrowroot lasts a long time. Use it to make stir-fry sauce, almond flour chocolate chip cookies, this particular recipe, almond flour waffles, and homemade foundation powder or dry shampoo.

Use blanched almond flour or almond meal to make this bread. I love the almond flour from Costco or Bob’s Red Mill brand.

Step 1: Combine dry ingredients.

In a large bowl, whisk together all the dry ingredients, except the pumpkin seeds: almond flour, arrowroot flour starch, arrowroot, pumpkin pie spice, cinnamon, baking soda, and salt.

Step 2: Add wet ingredients.

Make a well in the center of the dry ingredients and add all the wet ingredients: eggs, maple syrup, yogurt, pumpkin puree, vanilla extract. Stir to combine the ingredients to form a thick batter.

Step 3: Pour the batter into the prepared loaf pan.

Step 4: Bake for 50-60 minutes.

Bake for 50-60 minutes. You can test the bread by inserting a toothpick or chopstick in the center. If the toothpick is clean, the bread is done baking.

Step 5: Cool before slicing.

Allow the bread to cool for at least 15 minutes before slicing. The longer the bread rests (cools), the easier it will be to cut into slices and the firmer the bread will be.

Variations

There are a few variations to this healthy pumpkin bread. Here are a few of the best ways to tweak this recipe to your liking.

Egg Free

To make this egg-free, you’ll need to make flax eggs, which will act as the binder in this recipe, holding the bread together. Make enough flax eggs to replace the 3 eggs. Flax eggs are easily made with water and ground flax seeds.

Add Chocolate Chips

Chocolate and pumpkin are a delicious combo! Add 1 cup of regular chocolate chips or 1/2 cup of mini chocolate chips, either dark chocolate or milk chocolate morsels.

Add Dried Cranberries

Another great addition is dried cranberries. Add 1/2-1 cup dried cranberries to the batter.

Add Pumpkin Seeds

I love to sprinkle pumpkin seeds on the top of the bread, as it gives the bread extra crunch on the crust. Another option is to add pumpkin seeds directly to the batter. I recommend about 1/2-1 cup of pumpkin seeds.

Top With Cream Cheese Frosting

If you want to make this bread feel more like a sweet dessert, or something you’d find at Starbucks, add cream cheese frosting to the top of the bread before slicing. Add the frosting once the bread is fully cool or the cream cheese will melt.

This frosting is from my pumpkin loaf cake recipe and would be delicious on top of this bread as well: 8 ounces cream cheese, 6 TB butter (room temperature), 1/4 cup pure maple syrup, 1 tsp pure vanilla extract. Use a mixer to combine the ingredients. For this pumpkin bread, I recommend cutting the frosting ingredients in half.

Make Almond Flour Pumpkin Muffins

Turn this healthy pumpkin bread recipe into muffins. Prepare the batter, then spoon the batter into a muffin tin lined with muffins liners. Bake for about 22 minutes or until firm on top. The muffins are great for an easy breakfast or in the lunchbox (37+ easy packed lunchbox ideas).

Pro Tips for Baking Success

  • Only Use Almond Flour: Almond flour is the only flour that works in this gluten-free pumpkin bread recipe. Do not use white flour, einkorn flour, coconut flour, a gluten-free all-purpose flour, or spelt flour. If you’d like to make pumpkin bread with gluten, that’s healthy and easy to digest, I love this einkorn pumpkin spice muffins recipe.
  • Use parchment paper: Line the bread pan with parchment paper so it’s easy to remove the bread and let cool. This will prevent the bread from sticking to the bread pan and falling apart, which can easily happen with almond flour before it’s fully cool. Grease the pan with a bit of oil or butter, then place the parchment paper inside the pan. The butter/oil will keep the parchment in place so it’s easy to add the batter to the pan.
  • Weigh the flour. There is one thing that you need for fail-proof baking: a scale. Well, actually, two things: a scale and quality ingredients. My cup of flour is not the same as your cup of flour. Not weighing flour may result in disappointment when making cookies, cakes, or quick breads. Plus, weighing ingredients is much easier; just keep adding ingredients to the bowl until the scale tells you to stop. I’ve been using this digital scale for a few years now.

Which Almond Flour Should You Use?

Blanched almond flour: Made by grinding up almonds with the almond skin removed. This is done by dropping the almonds in boiling water, then cooling the almonds and peeling away the skin. Once the skin is gone, the almonds are “blanched.” Blanched almond flour is a yellow/cream color, and is typically light and fluffy. It’s ideal for making pastries, cakes, and breads.
Almond meal: Made by grinding up almonds with the skin. This flour is typically brown, has a coarse texture, and results in heavier, dense baked goods.
I’ve used both almond flour and almond meal to make this bread recipe with success. I prefer fine almond flour for a lighter texture, but almond meal may also be used in this recipe.

What Makes This Einkorn Oatmeal Cookie Recipe So Good?

Sometimes I get a craving for cookies that can’t be ignored. I usually make my favorite einkorn chocolate chip cookies or almond flour chocolate chip cookies (made with honey).

But lately, I’ve been craving oatmeal cookies, just like my mom used to make them. This classic einkorn oatmeal cookies recipe reminds of my childhood, but with an ancient grain twist. Here’s what I love about this recipe…

  • Easier to Digest: This recipe is made with einkorn flour, which is easier to digest due to its weaker gluten structure. I’ll share more about einkorn flour in the next section. I also use sprouted oats from One Degree brand, which makes the rolled oats easy to digest as well.
  • Less Sugar: We don’t fear sugar around here; instead, we consume it in moderation as a treat. That’s what sugar is meant to be…a treat. Since we don’t consume that many sugary baked goods, I find that most cookie recipes are way too sweet for our tastebuds. This recipe is made with half the sugar you usually find in cookie recipes.
  • Soft: The texture of the cookies certainly doesn’t suffer here.
  • Versatile: Add chocolate chips or raisins to this recipe, depending on your mood. Other delicious mix-in options: chopped macadamia nuts (I buy a big bag at Costco for snacking) or shredded coconut.

What is Einkorn Flour?

Einkorn is an ancient grain that is a pure unhybridized wheat variety.

  • Higher Protein and Less Starch: Einkorn has a much higher protein content (30% more than modern wheat) and less starch (15% less than modern wheat), along with a higher concentration of minerals and flavor.
  • Not Gluten Free: Einkorn is NOT a gluten-free grain and should NOT be consumed if you have celiac disease. If you need a gluten-free recipe, make my almond flour chocolate chip cookies. Einkorn is easier to digest, making it ideal for those with gluten sensitives.
  • Weaker Gluten Structure: Since einkorn has a weaker gluten structure, it can be difficult to bake with if it is new to you. That’s why I focus on creating recipes that have been tested so that you can easily make all of your favorites, such as this cookie recipe and my famous einkorn muffins.
  • Gaining Popularity: Einkorn is gaining in popularity from when I first used it many years ago. You might be able to find it in your local grocery stores (Whole Foods and many other health food stores now sell einkorn flour). I also love purchasing straight from Jovial Foods or through Amazon.

For this recipe, you’ll need all-purpose einkorn flour, which has small amount of the brain removed. This makes the flour even easier to digest than whole wheat einkorn. All-purpose einkorn has a light and airy structure which is perfect for lighter baked goods like cookies or my favorite einkorn chocolate cake.

Ingredients Needed

Make this recipe as classic oatmeal cookies, or add chocolate chips or raisins (or nuts). They are delicious on their own and with the mix-ins.

  • 1 cup unsalted butter, softened
  • 1/2 cup organic brown sugar (111 g)
  • 1/4 cup organic cane sugar (54 g)
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose Einkorn flour (170 g)
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon fine sea salt (I use Real Salt from Redmond)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cloves 
  • Pinch fresh nutmeg
  • 2 1/2 cups old-fashioned rolled oats (240 g)
  • Choose One: 1 cup Raisins or Semi-Sweet Chocolate Chips

How to Make: Step by Step

Step 1: Preheat oven and prepare a cookie sheet.

Preheat the oven to 350F and line a large cookie sheet (sheet pan) with a sheet of parchment paper.

First, cream the butter and sugar, then add the eggs and vanilla.

Step 2: Cream butter, sugar, eggs, and vanilla.

In the bowl of a stand mixer, or a large bowl, cream the butter, brown sugar, and cane sugar with the paddle attachment (or a hand-mixer) until light and fluffy. Then add the eggs and vanilla extract and mix well.

I don’t have time for extra dirty dishes, so I make this recipe in just one bowl.

Step 3: Add dry ingredients.

That’s right, no extra bowl needed. Add all the dry ingredients except the oats to the wet ingredients. Slowly mix to combine (it’s a good arm workout). It’s best to use a wooden spoon for this.

Step 4: Add rolled oats and mix-in of choice.

Use a wooden spoon to stir in the rolled oats. Stir in the chocolate chips or raisins. Another option is to use both chocolate chips and raisins, 1/2 cup each. Allow the batter to rest for about 10 minutes, as the einkorn needs this rest time to absorb the liquid ingredients.

Step 5: Scoop the dough.

With a medium cookie scoop or ice cream scooper, scoop out the dough and place on the sheet pan, about 2 inches apart.

Step 6: Bake for 8-10 minutes.

Bake the einkorn chocolate chip cookies for about 8-12 minutes (depending on size of the cookies) or until just starting to turn golden brown (time varies with every oven). They may look underdone in the centers. The appearance of the cookies is always your best judge to know when they’re ready.

Step 7: Rest for 5 Minutes.

Let the cookies rest on the cookie tray for 5 minutes before transferring to a cooling rack to cool completely.

Pro Baking Tips

  • Fresh Flour: I use all-purpose Einkorn flour that is already ground. If you have the wheat berries or purchase whole grain einkorn flour (which is like whole wheat flour), it will not act the same in this recipe. Using the gram weight is always best when using fresh flour, as fresh flour is lighter and airer than store-bought, pre-milled flour.
  • Resting Time: Einkorn cookies can be soft, which is why I let them rest on the baking sheet before moving to the wire rack. This reduces the chance of them breaking. I know it’s hard to wait, but let the cookies cool a bit before moving them.
  • Please, Use a Scale: Using a scale is the absolute best way to ensure success when making cakes, cookies, muffins, etc. Always weigh your flour. You can pick up a digital scale for under $20 on Amazon, Target, etc. I’ve had my scale for over 10 years and it’s still going strong.

What Kind of Oats? I used old-fashioned rolled oats here, but you can use quick oats in a pinch if that’s what you have. Do not use steel cut oats in this recipe. I like the brand One Degree, as the oats are sprouted, making them easier to digest.

Notes

Sweetness: These cookies are not super sweet. They are intended to be this way. If you want a sweeter cookie, use semi-sweet chocolate chips (raisins will also provide a small amount of added natural sweetness) OR increase the sugar to 1/2 cup (100 grams). With an increase in sugar, the cookies will be flatter and more crunchy than soft. 
Use a Scale: I highly recommend using a digital scale to weigh the ingredients when grams are provided. This will ensure you’re getting the perfect amount of flour, oats, and sugar.
Salt: If you’re using iodized salt, you may need to reduce the amount of salt to 1/2 teaspoon. I don’t test my recipes with iodized salt, which can have a saltier flavor; we use Redmond real salt to test all recipes.
Other delicious mix-in options: 1/2 cup shredded coconut or chopped macadamia nuts. The nutritional info does not include using chocolate chips or raisins.
Freezing: I love to freeze extra cookies to pull out and enjoy when a craving hits or to pack in the lunchbox. I think you could also easily freeze the raw dough by wrapping it in parchment paper and placing in a freezer bag. I personally haven’t tried freezing the dough yet.

What Makes This Recipe So Incredibly Good

In our family, we consume grains, like einkorn and spelt. It’s not uncommon for us to enjoy homemade einkorn pancakessourdough bread, and einkorn muffins.

I’ve also come to love gluten-free flour, particularly recipes made with almond flour. This gluten-free banana bread recipe has become a favorite with our whole family. Here’s what I love about this recipe.

It’s naturally sweetened with blanched almond flour or almond meal, honey or maple syrup (or stevia for a low-carb option), and extra ripe bananas.
  • Zero Gluten: This bread is 100% gluten free and the perfect treat, make-ahead breakfast, or snack for anyone with a gluten intolerance or celiac disease.

Ingredients

To make the best almond flour banana bread, you’ll need a few simple ingredients:

  • 2 1/2 cups blanched almond flour
  • 1/4 cup arrowroot flour starch 
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 ripe yellow bananas
  • 3 eggs
  • 1/2 cup maple syrup or honey
  • 1/4 cup plain whole milk yogurt or a dairy-free yogurt
  • 1 tsp pure vanilla extract

What is Arrowroot Starch? Arrowroot is a white, flavorless powder. It’s similar to cornstarch (without the corn) in that it thickens food. Almond flour alone can result in a soggy, dense bread. Arrowroot starch (which is paleo-friendly, gluten-free, and vegan) improves the texture of almond flour treats. Arrowroot lasts a long time. Use it to make stir-fry sauce, almond flour chocolate chip cookies, this particular recipe, almond flour waffles, and homemade foundation powder or dry shampoo.

How to Make, Step by Step

To make this recipe, you’ll need a large mixing bowl, medium-size mixing bowl, and 9×5-inch loaf pan. Preheat the oven to 350ºF. Line the bread pan with parchment paper.

In a large bowl, whisk together the dry ingredients: almond flour, arrowroot starch, cinnamon, nutmeg, baking soda, and salt.

Add the wet ingredients to the dry ingredients. Stir until combined. If you’re adding chocolate chips, walnuts, or dried fruit (see suggestions in next section), stir the ingredient into the batter now.

Step 4: Bake

Pour batter into the prepared loaf pan. Bake, in the center of the oven, for 60 minutes or until the center is firm. Insert a knife in the center of the bread to check for doneness. The knife should come out clean when the bread is done.

Let the bread cool for at least 20-30 minutes on the top of the stove or a wire rack. Remove the bread from the pan by lifting the parchment paper out of the pan. Almond flour sets as it cools, so it’s important to avoid cutting the bread during this time.

Add-Ins

I love plain banana bread, but sometimes it’s fun to add mix-ins. Here are a few ideas…

Dark Chocolate Chips: Add 1/2 cup of milk chocolate chips or dark chocolate chips to the batter, stir to combine. Or use cacao nibs.

Walnuts: Add 1/4-1/2 cup chopped walnuts to the batter, stir to combine.

Dried Cherries or Cranberries: Add 1/4-1/2 cup of dried fruit, like dried cherries or cranberries, to the batter and stir to combine.

Variations

Make this recipe dairy free, egg free, or sugar free. Or, instead of bread make paleo banana bread muffins.

Dairy Free: This recipe calls for yogurt. Use plain Greek yogurt, whole milk yogurt, or make it dairy-free with a plain plant-based yogurt.

Sugar Free: Instead of honey or maple syrup, some readers have used 1/2 cup applesauce or 1/2 teaspoon stevia. I haven’t tried these sweetener variations, but readers have experienced great success with these sugar-free substitutions.

Egg Free: Some readers who need an egg substitute have used flax eggs. Instead of real eggs, make a flax egg by combining flax seeds and water. How to make your own flax egg (you’ll need 3 flax eggs). This variation may result in a flat bread (a bit more dense), but still delicious.

Pumpkin Bread: If you love this healthy banana bread, try making the pumpkin variation. Use 1 cup pumpkin puree instead of mashed bananas. Follow this pumpkin bread recipe.

Make Muffins: Most quick bread recipes are easily turned into muffins by decreasing the baking time. Spoon the batter into a muffin pan with muffin liners. Bake for 22ish minutes or until firm on top. You could also make mini muffins; just use a mini muffin pan. Or, for a flourless muffin recipe, make flourless almond banana muffins.

What’s the best almond flour to use?

Almond flour is made by grinding almonds into a powder. The flour is commonly used to make keto and low carb treats. It can be used to make cake, muffins, cookies, breads, or as a binder in meatballs or meatloaf (a gluten-free alternative to breadcrumbs).

There are two different types of almond flour

Blanched almond flour: Made by grinding up almonds with the almond skin removed. This is done by dropping the almonds in boiling water, then cooling the almonds and peeling away the skin. Once the skin is gone, the almonds are “blanched.” Blanched almond flour is a yellow/cream color, and is typically light and fluffy. It’s ideal for making pastries, cakes, and breads.

Almond meal: Made by grinding up almonds with the skin. This flour is typically brown, has a coarse texture, and results in heavier, dense baked goods.

Which is best? I’ve used both almond flour and almond meal to make this bread recipe with great success. I prefer fine almond flour for a lighter texture, but almond meal may also be used in this recipe.

Can I substitute all purpose flour for almond flour?

All purpose regular flour is not a substitute for almond flour in this banana bread recipe or other almond flour bread recipes.

Almond flour, with the absence of gluten, doesn’t perform the same as a gluten-based flour like all purpose, whole wheat flour, or einkorn flour.

If you’d like to make a regular banana bread, with a gluten flour, make this einkorn and spelt bread recipe or einkorn maple-banana muffins. Einkorn is easier to digest than wheat, so it’s my preferred gluten flour.

Pro Tips for Best Results

1. Weigh the flour. There is one thing that you need for fail-proof baking: a scale. Well, actually, two things: a scale and quality ingredients. My cup of flour is probably not the same as your cup of flour. Not weighing flour may result in disappointment when making cookies, cakes, or quick breads. Plus, weighing ingredients is much easier; just keep adding ingredients to the bowl until the scale tells you to stop. I’ve been using this digital scale for a few years now.

2. Use parchment paper: Line the bread pan with parchment paper so it’s easy to remove the bread and let cool. This will prevent the bread from sticking to the bread pan and falling apart, which can easily happen with almond flour before it’s fully cool. Grease the pan with a bit of oil or butter, then place the parchment paper inside the pan. The butter/oil will keep the parchment in place so it’s easy to add the bread batter to the pan.

How to Store and Freeze

Because this bread is so moist, it doesn’t dry out in the fridge. Once the bread cools, store the loaf in an airtight container or bag for up to 1 week in the fridge. Eat at room temperature, cold, or reheat a slice in the microwave or a toaster oven.

The bread is even better the next day, so make this recipe for a prep-ahead meal for breakfast, a snack, or a dinner side dish. I’ll share a few serving ideas under the printable recipe, below.

Freeze the bread, once fully cool, in a freezer bag for up to 3 months. Freeze the bread whole or sliced.

Notes

The original recipe, published in 2013, did not include arrowroot starch. I’ve found this recipe works best with a small amount of arrowroot flour. You’re welcome to leave it out or use coconut flour instead. It does make a tremendous difference in the final texture of the bread. Keep in mind, you won’t see the addition of arrowroot in the video, as the video was made a few years ago.
Keto and Low Carb: This bread is lower in carbs than traditional banana bread recipes. It contains 24 grams of carbohydrates (21 net carbs, carbs minus fiber). Some readers make this recipe as a low-carb or keto banana bread and use 1/2 teaspoon stevia instead of honey or maple syrup for sweetener.
Muffins: Bake for 22-25 minutes, or until firm on top.

It’s officially summer and there’s nothing like a homemade popsicle on a hot summer day! The kids are out of school and it’s set to reach 100 degrees by the weekend.

With summer here, I’m ready to embrace chicken on the grill, no-cook grazing boards made from pantry ingredients, and all the frozen treats (like our favorite homemade vanilla ice cream).

Why make your own?

3 reasons to stop buying popsicles and start making your own homemade popsicles this summer:

  • Healthy: When you make your own popsicles, you know exactly what’s going in those popsicles. No high fructose corn syrup, artificial dyes, or mystery flavorings. Just healthy, real-food ingredients!
  • Easy: It takes just 10 minutes of hands-on time to make your own popsicles. And there’s no cooking involved! Once made, they’re a healthy snack the kids can help themselves to on a hot day. A homemade snack or treat doesn’t get any easier than popsicles from the freezer.
  • No Expensive Ice Cream Maker Required: Making summer treats, like homemade vanilla ice cream, requires an ice cream maker. But for DIY popsicles, you don’t need any expensive equipment; just a popsicle mold (you can keep this super basic) and ingredients already stocked in your pantry.

How do you make homemade healthy popsicles?

Are you in the mood for creamy popsicles made with yogurt or coconut milk? Or do you want to make something fruity with whole fruits, fruit juice, or fruit puree?

Once you know what kind of popsicle you want to make, here are a few basic principles for making your own popsicles.

Step 1: Flavor

One of the best ways to make easy homemade popsicles is to use your favorite fruit: fresh or frozen, ripe or slightly overripe (a great way to put those extra berries or bananas to use before they go bad). With fruit, you don’t need any extra sweetener as the fruit itself is sweet. Blend up the fruit with a liquid, like coconut milk, almond milk, Greek yogurt. Or, skip the whole fruit and use juice (like orange juice). The easiest way to make popsicles is to place the ingredients in the blender and give everything a good puree.

Step 2: Choose a Mold

After blending the popsicle ingredients, pour the mixture (which should resemble the consistency of a smoothie), into a popsicle mold. There are lots of options: make your own mold with plastic cups (little Dixie cups or small plastic yogurt cups work best), use a muffin tray, buy a reusable popsicle mold, or use a push up pop mold. Or, make fun dinosaur shapes with a special popsicle mold.

Step 3: Add a Stick

Without a stick it will be impossible to eat your popsicles once frozen. Most reusable popsicle molds come with reusable sticks. Personally, I hate cleaning those stick so I prefer to use wooden craft sticks, which the kids can just toss when they’re done.

Step 4: Freeze

Now you’re ready to freeze the popsicles. The time it takes to freeze the popsicle mixture depends on how thick it is. It takes about 4-8 hours to freeze homemade popsicles. The faster they freeze, the more they’ll resemble a store-bought popsicle (soft when you bite into it). To help them freeze quickly, place the popsicles in the coldest part of your freezer.

Step 5: Remove From The Mold

Once frozen solid, remove the popsicles from the mold by running the outside of the mold under cold water. This the easiest way to remove the frozen popsicles from the molds. I like to remove them all at once and store in a freezer bag to make it easy to grab and enjoy an ice-cold popsicle. The perfect treat on a hot day.

What Ingredients Do You Need?

There are so many delicious recipes and ways to make popsicles. You can create all sorts of different flavors with a few simple pantry ingredients. Here are the ingredients to experiment with for making your own fun treats.

Liquid: Yogurt, full-fat coconut milk (or another milk, such as: cow’s milk, almond milk, cashew milk), juice (apple juice, grape juice, pineapple juice, or orange juice), water, coconut water, or yogurt.

Fruit: Fruit may be blended with the liquid or chopped up and stirred into the liquid. Strawberries, blueberries, pineapple, kiwis, peaches, mangoes, cherries, raspberries, are just a few options. Steamed veggies can also be added, like carrots or beets. Or add raw spinach or avocado. When you freeze fruit, it becomes less sweet so adding sweetener is optional.

Sweetener: You may want to naturally sweeten homemade popsicles: honey, maple syrup, or a banana.

Herbs: During the summer, fresh herbs are bountiful (learn how to store fresh herbs). Blend up a few mint leaves or basil leaves for a subtle, fresh flavor.

Extras: Peanut butter, cocoa or cacao powder, lemon juice, chocolate chips, and vanilla extract are few of the fun ingredients you can add to make a unique popsicle.

Examples of how to make your own custom flavors with simple ingredients:

  • Peanut Butter Fudge Popsicles: blend coconut milk, peanut butter, banana, cinnamon, and maple syrup.
  • Blueberry-Yogurt Popsicles: blend blueberries, plain yogurt, and honey.
  • Strawberry-Mint Lemonade Popsicles: blend water or coconut milk, strawberries, mint leaves, and lemon juice.
  • Mango-Coconut Popsicles: blend mangoes and coconut water.

The Best Popsicle Molds

You can’t make DIY popsicles without some sort of mold. Here are all the options for the best homemade popsicle molds:

  • Reusable Popsicle Mold: I purchased my popsicle mold 4 years ago. $13 well spent! Popsicle molds are super easy to use and most come with reusable sticks/handles. I use this popsicle mold.
  • Fun Shapes: Make dinosaurs and other fun shapes with special molds, like this.
  • Dixie Cups and Wooden Craft Sticks
  • Plastic Yogurt Containers and Wooden Craft Sticks: Wash and reuse small plastic yogurt cups. Glass will break in the freezer, so don’t use the small glass yogurt cups.
  • Muffin Pan and Wooden Craft Sticks: The one issue with this option: it can be difficult to remove frozen popsicles from a muffin pan. Let the muffin tin rest for 5 minutes at room temperature to make it easier to remove the frozen popsicles.
  • Push Up Pop Mold: A silicone reusable mold that requires no sticks. I use this push up pop mold.
  • Zipzicle Molds: Just like a Go-Gurt Mold, but for homemade treats. Great for making ice pops.

How to Make a DIY Popsicle (The Easiest Beginner’s Recipe)

This simple recipe will get you started with making homemade popsicles using fruit. This is a great starter recipe for getting your feet wet with DIY popsicle making!

Ingredients

  • 2 1/2 cups frozen fruit strawberries, chopped pineapple, peaches, cherries, etc.
  • 1 13.5 ounce full-fat unsweetened coconut milk
  • 2 Tablespoons honey
  • 1/2 teaspoon pure vanilla extract

Instructions

  • Add all the ingredients to a blender and blend until smooth (about 60 seconds).
  • Pour the mixture into a popsicle mold (see options in the article above). This is what I use. I'm able to make 6 popsicles with this recipe. The number of popsicles you'll make depends on the size of your molds. Insert sticks into the mixture (either wooden craft sticks or reusable sticks).
  • Freeze for about 6 hours (between 4-8 hours is generally how long it takes for a popsicle to freeze).
  • Store the frozen popsicles in the molds or remove all the popsicles from the molds and store in a freezer bag or freezer-safe airtight container. To remove from the mold, run the outside of the popsicle mold under cold water to remove the popsicle.

When people make homemade popsicles, one of the biggest complaints is “they’re so icy!” There are a couple of solutions. 1. The greater the water content of the popsicles, the icier they’ll be. Einkorn flour is a non-hybridized ancient wheat variety. I’ve gathered the best einkorn flour recipes so you can easily try your hand at using this healthier grain. Some people use einkorn 1:1 for modern wheat flour, but I find that doesn’t always work. That’s why I took the time to measure out einkorn and tested these recipes to ensure the best results. I’ll also share how to replace regular flour for einkorn flour in your favorite recipes, because once you start baking with einkorn, it will quickly become your favorite flour!

What can I do with einkorn flour?

Any recipe you would normally use wheat flour in you can use einkorn! It does have a high protein content, though it has less elasticity than modern wheat. I recommend starting with cakes, pancakes (I’ll share a great recipe to start with at the end of this article), and muffins, since yeast can be a little tricky to work with in einkorn. Once you’re comfortable with making muffins, cake, and pancakes, move on to einkorn sandwich bread made with quick yeast or sourdough einkorn bread.  

When you purchase einkorn flour, look for “all-purpose” on the label. Jovial Foods Einkorn All-Purpose Flour is my favorite flour and the easiest to find in the United States. You can buy one single bag or a 10-lb bulk bag. This means some of the bran has been removed and it will act more closely to the all-purpose flour you are used to. You’ll notice the flour is a little more yellow, so your baked goods might be a slightly different color than usual as well. Can I eat einkorn wheat if I have celiac disease?

No! This is definitely some misinformation I have seen around. Einkorn IS wheat and it does contain gluten (although a weak gluten structure, it still contains wheat and gluten). The ancient grain is generally easier for people to digest if they have a minor intolerance. I myself find I can tolerate sourdough (which involves fermenting grains before consuming) or einkorn much easier than other forms of wheat. But if you have a life-threatening allergy or celiacs, you will not want to eat einkorn. Carla, the founder of Jovial Foods, started harvesting and producing einkorn flour because of her daughter’s gluten sensitivities (listen to her story in this podcast episode).

Benefits of einkorn flour

I’ve done the research and written a lot about the benefits of einkorn! Here are some of the top benefits of stocking and using einkorn flour in your real-food kitchen…

  • Easier to Digest: Ancient grains, like einkorn, are easier to digest than modern wheat varieties. People with gluten sensitives (not celiacs, einkorn is not gluten free) find that einkorn is easier to digest due to its very weak gluten structure.
  • Easy to Substitute: Once you’ve made a few recipes, it’s very easy to substitute all-purpose einkorn for your usual all-purpose flour.
  • Excellent Nutritional Profile: Einkorn has a high protein content (30% higher than modern wheat), less starch (15% less than modern wheat), and contains carotenoids, minerals, and B vitamins.
  • No Knead: Einkorn does not like to be fussed with or kneaded like wheat flour. For breads and rolls (i.e. cinnamon rolls, sandwich bread, and hamburger buns) that usually call for a long kneading process, your arms can take a break and let einkorn work its magic.

Can I substitute einkorn flour for regular flour?

If you have a favorite recipe and want to try using einkorn instead of whole wheat or all-purpose regular flour, here’s how to do that. Einkorn may be used cup for cup in recipes calling for whole wheat flour when making muffins, pancakes, cookies, and cakes. When making these recipes, you may need to reduce the liquid amount (such as the milk) by 15%. Einkorn absorbs liquid slowly. Allow einkorn batter to rest for 10 minutes before adding to a muffin, bread, or cake pan. If after 10 minutes of rest, you feel more flour is needed, add more einkorn at this time.

10 Best Einkorn Flour Recipes

The flavor and texture of einkorn flour translates to the most delicious, easier-to-digest baked goods, from cake and cupcakes to cookies to soup dumplings and scones and muffins. Most of the recipes on this list are made with all-purpose einkorn flour, but whole wheat einkorn may also be used (reduce the whole wheat einkorn by 1/4 cup). If you’re grinding einkorn berries to make flour at home, use the weight measurements (grams) versus cups provided in the recipes (this is far more accurate as freshly-milled flour will be light and airy).

Is einkorn the healthiest flour?

Einkorn is a variety of wheat. It’s known as the oldest variety of wheat, or the first wheat, making it an ancient grain. Unlike modern day wheat, which had undergone hybridization, einkorn still holds to its original properties and nutritional values. In our effort to make modern wheat “better” and more efficient from a production standpoint (through hybridization, mono-cropping, etc.), nutrients have been lost. Einkorn has a much higher protein content (30% more than modern wheat) and less starch (15% less than modern wheat), along with a higher concentration of minerals and flavor. Einkorn is also easier to digest. Einkorn is among the healthiest wheat flours. This study comparing einkorn vs. modern wheat is fascinating.

Our results confirm the higher carotenoid levels in einkorn than in modern wheats, and the effectiveness of sourdough fermentation in maintaining these levels…” Einkorn shows promise in being anti-inflammatory (compared to modern wheat) and when paired with sourdough practices (sourdough pre-digests grains during the fermentation process, learn more), einkorn may be anti-inflammatory and is easier to digest. If you already have a sourdough starter, make my favorite sourdough einkorn banana muffins.

Can you use einkorn flour in place of all purpose flour?

Yes, you can use einkorn flour in place of all-purpose flour. I recommend using all-purpose einkorn, which has some of the bran removed (not all). According to Jovial Foods, “All Purpose (einkorn) is a high-extraction, lighter flour that has had 20% of the bran and germ removed after milling and will stay fresh longer.” If you want to use whole wheat einkorn in place of all purpose flour, decrease the flour amount by 1/4 cup. Allow a batter made with einkorn flour to rest for 10 minutes before baking, as einkorn flour is slower to absorb liquid.

Is einkorn flour the same as all purpose flour?

Einkorn flour is not the same as all-purpose flour made from hard white wheat berries. Einkorn flour is made from einkorn wheat berries, an ancient grain. I’m a HUGE fan of einkorn flour as evidenced by the number of einkorn recipes that can found on the blog. Einkorn is my go-to flour for making muffins, cakes, pancakes, biscuits, cookies, and dumplings. It’s no surprise that today’s chocolate zucchini muffin recipe calls for einkorn flour.

  • Einkorn is known as the oldest variety of wheat making it an ancient grain. The ancient grain is believed to have originated in the Tigris-Euphrates region and is possibly the main grain referenced in the earliest accounts of the Bible.   • Einkorn is the only wheat that’s missing certain types of gluten proteins that some people are sensitive to. Einkorn is not gluten-free, but many people who have gluten sensitivities tolerate einkorn well (NOT Celiacs, do not consume einkorn if you have celiacs).

The flavor, texture, and nutritional aspects of einkorn make it a fantastic flour to use for baking, particularly lighter baked goods like muffins. I shared an einkorn 101 post here, it’s definitely worth a read and listen (there’s a podcast episode included at the bottom of that post) if you’re new to einkorn.

Where to Buy Einkorn Flour

Einkorn isn’t as common as wheat or all-purpose flour made from modern wheat, so it can be difficult to find in the average grocery store.

You can find einkorn at Whole Foods and health food stores, Earth Fare, Vitacost, and on Amazon. Definitely shop around as prices can vary based on the retailer. My favorite brand is Jovial Foods since finding their products is fairly easy, and I’ve come to respect this brand as a leader in the real food movement (check out my podcast episode with Carla, the founder, here). Another fantastic source for einkorn (flour and berries) is einkorn.com.

Tips for Making Chocolate Zucchini Muffins with Einkorn Flour

  • Sift the einkorn flour: I know, it’s a extra step none of us want to take, but sifting the flour by placing it in a fine mesh sieve and then gently shaking it into a bowl means you won’t end up with flour clumps in the muffins. And trust me, no one wants flour clumps in a muffin. Einkorn, in particular, seems to get a bit clumpy so I find sifting the flour solves this issue. Sifting flour also helps to make a lighter baked good.
  • Press the zucchini to remove water: Zucchini retains a ton of water that can make baked goods too moist. Shred the zucchini into a towel and then ball up the towel and squeeze out excess water from the zucchini. Then add the zucchini to the batter and stir in the sifted einkorn flour and other dry ingredients.
  • Sub whole wheat einkorn: If you want to use whole wheat einkorn instead of the all purpose einkorn flour called for in this recipe, reduce the flour by about 1/4 cup. The batter should be thick once all the ingredients are incorporated. If you find the batter is too runny, add in additional flour until you reach a thicker consistency.

Prep Einkorn Muffins in Advance to Save Time

My kids are obsessed with these muffins and love them in their school lunch or for an afternoon snack or breakfast. (Okay, I’m just as guilty. I love the muffins, too, and will eat them at any meal.)

To be ready for their hungry appetites, I like to prep a batch of muffins on the weekend, particularly when zucchini is in season and available at the farmer’s market, to enjoy for breakfast and store extras in the fridge or in the freezer. I think you could also make a double batch of this recipe and freeze the extra for future enjoyment–saving a ton of time and your morning sanity well into the future. This is what I call “cooking once, eating twice.”

Instructions

  • Preheat the oven to 350F. Line 12 muffin cups in a muffin tray.
  • In a large mixing bowl, combine the wet ingredients: melted butter, honey, Greek yogurt, eggs, and vanilla extract.
  • Place the shredded zucchini in a kitchen towel (I grate the zucchini right into the towel using a cheese grater). Bring the edges of the towel together and squeeze the base of the towel (where the zucchini is located) to remove excess water/juices.
  • Add the shredded zucchini to the batter and stir to combine.
  • Sift the einkorn flour into the wet ingredients using a fine mesh sieve (add the flour to the sieve and gently tap to sprinkle the flour into the bowl--this removes clumps that can form in the batter).
  • Add the remaining dry ingredients: cocoa powder, baking soda, baking powder, cinnamon, and salt.
  • Fold the dry ingredients into the wet ingredients until combined.
  • Stir in any mix-ins desired (optional): chocolate chips or nuts. I personally love the flavor of the muffins without chocolate chips or nuts, but if you want a sweeter muffin (the muffins aren't super sweet due to the honey), chocolate chips will add more sweetness.
  • Let the batter rest for about 5-10 minutes to allow the flour to absorb the wet ingredients.
  • Evenly divide the batter into 12 muffin cups (they will be full). If you don't want such large muffins, fill the liners just halfway and make about 16 muffins.
  • Bake the muffins for 18-21 muffins, until firm on top.
  • Let the muffins rest for 10 minutes before removing from the pan to cool completely.

Notes

Sweetener: This recipe isn't super sweet. I personally don't want muffins super sweet, as that  would make them more of a cupcake than a muffin. The honey and cinnamon offer just a touch of sweetness. If you want to use maple syrup, that's an option as well. 
Whole Wheat Einkorn Flour: I haven't tested this recipe using whole wheat einkorn flour, but I think it will work. Generally, I decrease the flour by 1/4 cup when using whole wheat einkorn instead of all purpose einkorn. If you'd like to do that, just watch the batter. If the batter is thick, you're good. If it's too runny, slowly increase the amount of flour (a tablespoon at a time) until you get a thicker batter. 
Cocoa Powder: I recommend using cocoa powder in this recipe and not cacao powder. Cacao just doesn't have the same chocolatey taste in baked goods, so it may not result in the same rich chocolate flavor.

If you’ve made the einkorn muffin recipe here on the blog, then you know just how amazing applesauce is for baked goods. Applesauce not only adds incredible moistness to baked goods, it also provides a natural sweetness to typically over-processed treats. This means a less-processed sweetener, like honey or maple syrup, may be used without compromising the sweet flavor or texture of a baked good.

This next paragraph is going to completely contradict what I just said, so hang with me…

When it comes to making speciality treats that are only enjoyed a few times a year, like cake, I’m personally okay with using an organic sugar (like cane sugar). This vanilla einkorn cupcake recipe, made with cane sugar, is my go-to recipe for birthday celebrations, along with this einkorn chocolate cake. I’m a firm believe that something like cake is meant to be a treat!

A treat isn’t consumed because of its nutrients, and it isn’t meant to be a daily or even weekly food. A treat is meant to be enjoyed, savored, and celebrated. I think this idea is missed in our ready-to-go treat society. Gone are the days of baking treats in home kitchens, which requires time and attention to the process. Today, most people just run to the store and grab cookies or cakes off the store shelf. The time, patience, and work involved in making treats has been lost and so they’re consumed in a quick, careless way. The convenience factor is amazing (and trust me, I’ve been saved many times by a grocery store cake), but it’s also led our processed food society to over-consuming treats that were once reserved for weekends (remember Sunday night dinner?), birthdays, and holidays.

When it comes to making a treat, like chocolate or vanilla cake, I’m okay with using these more refined sweeteners in an effort to maintain a treat’s integrity (the taste and texture). Some treats, like carrot cake, naturally lend themselves to more natural sweeteners without compromising the integrity of the treat or complicating the baking process.

Carrot cake naturally lends itself to being a “healthier” dessert. When the first word in your name is carrot, I just expect more from you than loads of white sugar.

By replacing the white or brown sugar with less-processed sweeteners, carrot cake naturally gets a “healthier” face-lift.

How to Make Honey-Sweetened Applesauce Carrot Cake

As the name implies, this Honey-Sweetened Applesauce Carrot Cake is made with natural sweeteners: honey, applesauce, and freshly-grated carrots (a sweeter vegetable). The combination of the 3 ingredients not only escalate this classic cake to a real food status but also result in a super moist cake. And for me, a super moist carrot cake is a must!

How to make this classic, naturally-sweetened carrot cake…

  • 1st: In a large bowl, whisk together the dry ingredients: einkorn flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  • Next, combine the wet ingredients in a second large bowl: melted butter, honey, applesauce, eggs, and vanilla extract. Give the wet ingredients a good whisk.
  • Now it’s time to add the wet ingredients to the dry ingredients and stir to combine.
  • Once combined, add grated carrots, chopped walnuts, and shredded coconut to the batter. If you don’t like coconut, you can omit this ingredient.
  • Let the batter rest for 10 minutes. Einkorn slowly absorbs liquid ingredients, so during this time the flour will absorb the liquid and the batter will thicken slightly. This is a common step when working with einkorn batters.
  • Meanwhile, grease 2-8inch cake pans with butter and then sprinkle each with flour. Shake off the flour. This will help the cakes easily slide out of the pans once they are cool. If you’d prefer, you can use a 13×9 pan.
  • Pour the batter into the cake pans and then bake for 40 minutes.
  • While the cake bakes, make the cream cheese frosting, which also uses honey as a natural sweetener.
  • Remove the cakes from the oven and fully cool.
  • Once cool, it’s time to frost and decorate. I love to add chopped walnuts and orange zest (grated orange peel) over the top of the cake and arrange leafy green carrot tops along the perimeter of the cake.

This carrot cake recipe calls for einkorn flour. What is einkorn flour?

All-purpose einkorn is light with a delicious taste, which makes for the best cakes, pancakes, and muffins. Einkorn is a variety of wheat. It’s known as the oldest variety of wheat, or the first wheat, making it an ancient grain. This particular species of grass grew wild for thousands of years before it was intentionally planted and harvested.

The wheat that’s commonly used today isn’t the same as the wheat our ancestors consumed for thousands of years. Modern wheat has been hybridized. Hybridization is the act of crossing two different species of plants with the goal of creating a new variety of plant. This changes the very makeup and structure of the new plant.

Why do this?

There are many reasons, from improving the yield of the crop to making a plant more disease resistant. As Carla Bartolucci explains, in Einkorn: Recipes for Nature’s Original Wheat, “During the Green Revolution from the 1940s to the 1960s, breeders created new high-yielding varieties of wheat with hybrid seeds that would carry better traits for large-scale farming”

Einkorn and other ancient grains (like emmer and spelt) have a thick husk around the very grain. Modern wheat has a thinner husk that’s easier to remove. Modern wheat may seem like a better choice for production and profitability. But with the increased use of pesticides and fertilizers, is this thinner husk such a good idea? Plus, that thick husk naturally occurs on grains for a reason. Why mess with what nature intended as protection?

While cross-breeding may be a good idea from a large-scale farming standpoint, how does this effect our ability to digest the grains? And what kind of effect does consuming large amounts of this grain have on our overall health?

This is where einkorn really shines, because it still holds to its original properties and nutritional values. In our effort to make modern wheat “better” and more efficient from a production standpoint, nutrients have been lost. Einkorn has a much higher protein content (30% more than modern wheat) and less starch (15% less than modern wheat), along with a higher concentration of minerals and flavor. This makes einkorn distinctly different than modern wheat.

And when we look at the enriched white flour that is widely used today and milled from modern wheat, the nutrients are even further removed, which is why key nutrients (now in isolated forms) must be added back in.

Einkorn is also the only wheat that’s missing certain types of gluten proteins that some people are sensitive to. Einkorn doesn’t have less gluten than modern wheat. It actually has a similar gluten content to modern wheat. The difference is the gluten structure (in einkorn) is weak, making it remarkably different than our modern wheat.   • In a large bowl, whisk together the dry ingredients: einkorn flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt. Set aside.
  • In another large bowl, whisk together the wet ingredients: melted butter, honey, applesauce, eggs, and vanilla extract. Whisk vigorously for about 30 seconds, until the honey is combined with the other ingredients.
  • Pour the wet ingredients into the dry ingredients, and gently stir until all the ingredients are well combined. Add the grated carrots, chopped walnuts, and shredded coconut to the batter, stirring just until combined. Let the batter rest for about 10 minutes. Meanwhile, grease 2-8inch cake pans with butter and then sprinkle each with flour. Shake off the flour. This will help the cakes easily slide out of the pans once they are cool.
  • Pour the batter into the cake pans. Bake for 40 minutes. Insert a toothpick into the cakes to test for doneness–they should come out clean.
  • Meanwhile, make the frosting. In a stand-mixer (you can also do this with muscle power and a wooden spoon), beat together the softened butter and honey using the paddle attachment. Once the butter and honey mixture is smooth, add the cream cheese and continue to beat the frosting until smooth. You can also use the whisk attachment for this step, but I’ve found the paddle attachment does a better job at removing any butter chunks. Place the frosting in the fridge until the cakes are cool.
  • Let the cakes rest in the pan for about 25-30 minutes, then flip the pans over to remove the cakes. Allow the cakes to fully cool. Slice the top off one cake, then gently flip the cake over onto a plate or cake stand. Frost the top and sides of the cake, then add the second cake, and continue frosting. Sprinkle the top of the cake with extra chopped walnuts (toast these in a pan on the stove-top for an extra treat) and orange zest (my favorite addition). Due to the frosting, this cake needs to be kept in the fridge.

Notes

13×9 Pan Baking Note: According to a reader via an Instagram comment, this cake turns out great when it’s baked in a 13×9 pan: “I made your honey carrot cake yesterday and it was loved by all. I made it in a 13×9 pan and it worked great. It took about 45 minutes at the temperature listed in the recipe.”
Frosting Note:
This recipe will yield enough frosting to lightly frost the cake, but not enough to create a thick frosting. If you’d like a thick layer of frosting around the cake, I recommend doubling the butter and cream cheese amounts, but only increasing the honey to 1/3 cup. Taste the frosting, and add more honey if needed. I’ve found that 1/3 cup of honey is sweet enough for this frosting.

Sunday afternoon we usually spend about an hour prepping food for the upcoming week. Nothing crazy, just components that can be mixed and matched to build a breakfast or lunch or a quick snack throughout the week. Today’s no bake energy bites recipe has become a favorite to make during “prep time.” The energy bites make a great snack or lunchbox addition or even a quick grab-and-go breakfast alongside a smoothie or hard boiled eggs.

Energy bites aren’t a new thing, and I’m not the original inventor of this recipe concept (is there really anything new under the sun?). I first discovered energy bites a few years ago, after picking up a bag of flaxseeds at Trader Joes. On the back of the bag was a recipe for no bake energy bites. I decided to give them a try, and ever since they’ve become a family favorite. Over the past few years, I’ve tweaked and modified that recipe to make it work for our taste and also our need for a nut-free snack and lunch option for the kids (they attend a nut-free school).

Are Energy Bites Healthy?

Since the energy bites are usually regarded as a health food, and consumed more like a regular snack or lunch component versus a treat, let’s talk about the “healthiness” of this recipe.

Most energy bites are made with a few basic real-food ingredients: a nut or seed butter, honey, oats, flax seeds, and chocolate chips. So just from the start, we’re not talking about any ultra-processed ingredients. Even honey, being a sweetener, has some benefits and isn’t a refined sweetener. (Check out my guide to real food sweeteners here.)

This recipe is referred to as “energy bites” due to the satiating combo of ingredients: protein, carbs, healthy fats, and fiber. Each one comes together to deliver that slow burn of energy needed to keep you from crashing and remain satisfied. That’s one of the reasons that energy bites make such a great snack, particularly for kiddos when they’re at school and need to make it through a long morning or afternoon that requires lots of focus and energy.

Ingredients Needed to Make Energy Bites

Here’s what you’ll need to make this no bake recipe…

Easy Energy Bites Recipe

Ingredient 1: Old Fashioned Oats

The base ingredient for this recipe, also known as “rolled oats.” I don’t suggest using anything else, no quick oat or steel cut oats. Rolled oats provide just the right texture and flavor and, yes, they are safe and delicious to consume raw. I personally like sprouted oats from One Degree brand as they’re easier to digest. Sprouting the oats increases the vitamins and minerals and makes them more bio-available. But any rolled oats will work for this recipe, sprouted or not.

Ingredient 2: Seeds

I like to add seeds to my energy bites recipe. Pumpkin seeds are my choice as they have a delicate flavor and texture (not too crunchy or hard). If you’d like to use a different nut or seed and it’s on the large or super crunchy side, I recommend chopping the nuts/seeds first before adding to the energy bites mixture.

Ingredient 3: Flaxseeds

Not only do flaxseeds add a good amount of healthy fats (omega-3s) and fiber, they also act as a binder for the bites. Since flaxseeds are easiest to consume and digest in their ground state, we’re going to grind the seeds first in a spice grinder or you can buy pre-ground flaxseeds. If you go this route, be sure to store the ground flaxseeds in the fridge as the natural oils can cause the seeds go rancid quickly in a warmer environment.

Ingredient 4: Nut or Seed Butter

I use sunflower butter since my kids attend a nut-free school. Peanut butter, almond butter, and cashew butter also work great in this recipe. Each nut/seed butter adds a different flavor profile to the energy bites, so you may even want to play around and switch up the nut/seed butter you use from time to time. To keep the bites healthy, make sure your nut/seed butter only contains nut/seeds and maybe some salt (no extra oils, sweeteners, etc.)

Ingredient 5: Honey

A natural sweetener that adds just a touch of sweet taste to the bites and also helps to bind the ingredients together. I love local raw honey that’s lighter in color and taste (like Orange Blossom).

Ingredient 6: Salt

Just a touch of mineral-rich salt (like Real Salt) is all you need to really bring out the flavor in the energy bite ingredients.

How to Make No Bake Energy Bites

Once you have the ingredients we just talked about, the energy bites come together in under 10 minutes.

  • To make the bites, first grind the flaxseeds in a spice grinder. You can skip this step by using pre-ground flaxseeds from the store.
  • Next, add the oats, seeds, flaxseeds, and a pinch of salt to a large bowl.
  • Then add the nut or seed butter of choice and honey to the dry ingredients.
  • Give everything a good stir until combined.
  • Now, with your hands (run your hands under water for a second first to make this step easier and less sticky), scoop a small amount of the mix out of the bowl. Roll the mix around in the palm of your hands to form a ball. You can shape the bites as big or as small as desired. (This is also a great activity for the kids!)

Store the energy bites in an air-tight container (check out my favorite storage containers here) in the fridge for about 7 days or store in the freezer for up to 3 months.

Instructions

  • Grind the flaxseeds in a spice grinder. You can skip this step by using pre-ground flaxseeds from the store.
  • Add the oats, seeds, ground flaxseeds, and a pinch of salt to a large bowl.
  • Add the nut or seed butter of choice and honey to the dry ingredients.
  • Give everything a good stir until combined.
  • Now, with your hands (run your hands under water for a second first to make this step easier and less sticky), scoop a small amount of the mix out of the bowl. Roll the mix around in the palm of your hands to form a ball. You can shape the bites as big or as small as desired. (This is also a great activity for the kids!)
  • Store the bites in an air-tight container (check out my favorite storage containers here) in the fridge for about 7 days or store in the freezer for up to 3 months.

Homemade gifts don’t need to be fancy or complicated. In fact, the simplest gifts always result in the greatest reactions from recipients. How to Make Cookies in a Jar

Today’s recipe, Cowboy Cookies in a Jar, is one of our favorite homemade gifts to make for teachers, family, and friends. The jars come together in just a few minutes, particularly if you prep the ingredients in large bowls ahead of time.

Simply layer each ingredient in mason jars. Easy as 1,2,3! You don’t have to cook or bake anything–that’s for the recipient to do.

To complete each gift, we like to add a ribbon around each jar, along with a gift tag and baking instructions. If there’s time, we like to add the remaining ingredients to a bowl (along with butter, vanilla extract, and eggs) and treat ourselves to our own freshly-baked cowboy cookies.

Ingredients

Cowboy Cookie Mix (in a mason jar):

Make the Cookies:

  • 11 TB butter softened**
  • 2 eggs
  • 2 tsp pure vanilla extract ***
  • 1 jar Cowboy Cookie Mix see recipe above

Special Equipment:

  • quart-size mason jars These are super expensive on Amazon. Check home stores and grocery stores for the best price.

Instructions

Cowboy Cookie Mix (in a mason jar):

  • In a small bowl, whisk together the flour, cinnamon, allspice, baking soda, and salt. Pour the mix into a quart-size mason jar (any quart-size, or slightly larger, wide mouth jar will work). I highly recommend using a funnel to pour the flour and remaining ingredients into the jar. Add the oats and sugar. Gently tap the bottom of the jar on a hard surface to compact the ingredients without compromising the individual layers. Add the cranberries and chopped pecans. Gently tap the bottom of the jar to compact the ingredients again. Finally, add the chocolate chips, tapping the jar if more room is needed. Place a lid on the jar and attach the gift tag instructions (download the printable gift tags, here).

Make the Cookies:

  • Preheat the oven to 350F. In a large bowl, using a hand-mixer, beat the softened (to room temperature) butter. Mix in the eggs and vanilla extract. Pour the contents of the mason jar into the bowl, and mix everything together. Scoop the dough onto a baking sheet (I use an ice cream scooper). Bake the cookies for 12-14 minutes. 

Notes

*Bittersweet or extra dark chocolate chips will also work. I bet white chocolate chips would also be delicious in this recipe.  
**I've used both salted and unsalted butter in these cookies. Unsalted is usually preferable for baked goods; however, I haven't had an issue (with taste or texture) with using salted versus unsalted. 
***I make vanilla extract for Christmas presents. I use vanilla beans from Frontier Co-op and vodka. I'm planning to place a jar of vanilla extract in a gift bag with the cookie mix. If you don't want to make vanilla extract, I think it would be really sweet to purchase a bottle of vanilla extract for each cookie mix recipient. Simply Organic makes a fantastic vanilla extract. 
11 tablespoons of butter = 1 1/2 standard sticks of butter (minus 1 tablespoon). A standard stick of butter is 8 tablespoons.

I take a different view now. I see the act of making homemade marshmallows as a special tradition, a joyful family memory, a way to slow down and celebrate good food with the people I love.

Marshmallows aren’t something we make on a regular basis, but when we do (mainly over the holidays), the kids find so much joy in both the process and the final result. They love watching the simple ingredients bubble up and form a sweet syrup that magically whips up into the fluffiest, sweetest marshmallow candies.

While the act of making something like marshmallows may seem unimportant and trivial, it’s part of the bigger legacy we pass down to our kids. A legacy that celebrates slowing down, creating something special with the people we love, and sharing in memorable and meaningful traditions.

What Ingredients Do You Need to Make Homemade Marshmallows?

Homemade marshmallows are fairly easy to make. For ingredients, you’ll need…

  • water: the base of the marshmallows, along with the sweetener.
  • gelatin: a tasteless and also incredibly nourishing animal product made from boiling the skin, cartilage, and bones of an animal (such as a cow). Now, this may sound disgusting to a culture that’s obsessed with boneless meat and has lost a connection to food sourcing, but the truth is… this is a way of using the whole animal. <–That’s what sustainable eating is all about. Don’t worry, your marshmallows won’t taste like a cow. The gelatin is essential, it’s the star ingredient to creating a marshmallow texture. Without this ingredient, you can’t make marshmallows. I recommend a grass-fed gelatin, like Vital Proteins brand.

  • pure maple syrup: Most homemade marshmallow recipes call for light corn syrup. Since corn syrup is (usually) a genetically modified food product (meaning, it’s made from genetically modified corn), I choose to avoid it. Maple syrup, or a combo of 1/2 honey and 1/2 maple syrup, works wonderfully in place of the corn syrup.
  • vanilla extract and salt: these ingredients add flavor to the marshmallows. Just a touch of saltiness to balance out the sweet and a touch of vanilla.
  • arrowroot starch flour and powdered sugar: Once you make the marshmallow mixture (which resembles marshmallow fluff), you’ll need to pour the mixture into a pan to allow the fluff to rest and turn into set marshmallows. To avoid the marshmallows sticking to the pan (and parchment paper), a dusting of arrowroot starch (a corn starch alternative, you can also use corn starch) and powdered sugar needs to be sprinkled over the surface of the parchment paper.

Now, let’s talk about the special equipment needed to make marshmallows

  • candy thermometer: I’ve tried to make marshmallows without a candy thermometer in the past and while it can be done, it’s not the most accurate or reliable method. I highly recommend purchasing a candy thermometer. You can find one at Target, on Amazon, or just about any grocery store with a small cooking accessories section. You’ll need this tool to ensure the water and maple syrup mixture reach a temperature that produces the classic, fluffy marshmallow texture.
  • hand mixer (or stand mixer):  A hand mixer (or stand mixer) is needed to whip the gelatin and maple/water mixture into marshmallow fluff. This takes about 10 minutes, so using a whisk isn’t going to work in this recipe. Just a word of warning, a stand mixer can easily over-whip the mixture so keep a careful eye on the process. The whipping process requires your careful observation skills.

How Do You Make Homemade Marshmallows?


Now that you know what ingredients and tools you’ll need to make marshmallows, let’s talk about how to make homemade marshmallows…

1. Activate the gelatin: In a large bowl, dissolve the gelatin in water. Just set it aside for now. As the gelatin dissolves, it will resemble almost a gummy candy texture.

2. Heat the maple syrup and water: Warm the maple syrup, water, and salt in a saucepan. Insert the candy thermometer in the liquid and let the mixture cook until the thermometer reads 238F. This is considered the soft candy stage.

3. Whip the mixture into marshmallow fluff: Turn on your hand mixer (or stand mixer) and, with the mixer on low speed, slowly add the hot maple mixture to the gelatin. Once the maple mixture has been added, continue to beat the mixture on medium speed until you reach what resembles marshmallow fluff: a white, silky fluff with a smooth texture.

4. Prepare a baking pan: Line a baking pan with parchment paper and sprinkle the paper with an arrowroot and powdered sugar mixture. Pour the marshmallow fluff into the pan and use a spatula or one of those spatula spoon things to spread the fluff throughout the pan. Sprinkle more arrowroot and powdered sugar over the top and then let the marshmallows rest for several hours or, ideally, overnight. If you live in a humid climate (like me), you’ll definitely need more time for the marshmallows to set and dry.

5. Cut and enjoy: Once the marshmallows are set, remove the parchment paper from the pan, and cut the block into individual marshmallows. Now, if you live in a humid climate, I’ve found it helpful to allow the cut marshmallows to rest at room temperature for another few hours to fully dry. If you don’t live in the tropics (and deal with humidity all year long), then you don’t need to heed this recommendation. The marshmallows are now ready to enjoy!

How to Store Homemade Marshmallows


Now that you have homemade marshmallows, here’s how I recommend storing them

  • Freezer: This is my favorite option! Store your homemade marshmallows in an air-tighter container or bag in the freezer for up to a 3 months. They won’t freeze, like an ice cube, so when you’re ready to enjoy a marshmallow, just pull one directly from the freezer and enjoy. No defrosting needed.
  • Counter or Fridge: Store your homemade marshmallows for up to a couple of weeks on the counter (or fridge) in a cool, dry place. I recommend storing the marshmallows in a storage container in between parchment paper layers to keep the marshmallows from sticking to each other.

What Can You Do With Homemade Marshmallows?


You probably don’t need any help figuring out what to do with homemade marshmallows. Trust me, once you taste your first bite, you’ll know exactly what I’m talking about. But, just in case, here a few ideas for how to use homemade marshmallows…

  • Hot Cocoa: Make homemade hot cocoa and top it off with homemade marshmallows. Try this easy recipe…
  • Coffee: This is my adult, morning version of hot cocoa. Top your coffee off with this seasonal, fun treat.
  • S’mores: Toast up your marshmallows and make s’mores. Just add graham crackers and chocolate.
  • Eat Them Like a Cookie or Candy: This is my favorite way to enjoy homemade marshmallows. Add some marshmallows to a Christmas cookie platter for guests to enjoy, too.

Homemade Marshmallows Without Corn Syrup

  • Line a baking pan with parchment paper (optional), and sprinkle the parchment (or pan) with a layer of the arrowroot and powdered sugar mixture (or just arrowroot). 
  • In a large bowl, sprinkle the gelatin evenly over 1/2 cup of water. Don’t stir, just let it rest. 
  • In a medium-size saucepan, stir the maple syrup, 1/2 cup of water, and salt. Add a candy thermometer to the edge of the pan. Turn the heat up to high and bring the mixture to a boil, then reduce to medium heat. Heat the maple syrup mixture until it reaches 238F (around soft candy stage). 
  • With a hand mixer on low speed, pour the maple mixture slowly into the gelatin. Add the vanilla extract. Increase the speed to medium/high and beat the mixture for about 10 minutes or until silky, smooth, white, and fluffy (should look like marshmallow fluff). It's really easy to over-beat the mixture when using a stand mixer, which is why I recommend using a hand mixer. If you're using a stand mixer, don't walk away from the mixture. Pay close attention to the change in texture. You might need to reduce the beating time for a stand mixer as well.
  • Once ready, the marshmallow mixture should be silky, smooth, fluffy, and white (see photos above). You can spoon a small amount on a plate to see if it maintains shape. 
  • Add the marshmallow mixture to the prepared baking pan. Sprinkle the marshmallows with more of the arrowroot and sugar mixture (or just arrowroot) to evenly coat the top. Spread the mixture evenly over the marshmallows with your hands or spatula, if needed. 
  • Let the marshmallows rest overnight or up to 24 hours (particularly for a very humid climate). It’s best to let the marshmallows rest uncovered so they can dry out. I’ve been successful with just a few hours of resting time when the humidity is low. You can test for readiness by cutting a small piece. The individual piece should be dry. If you cut the marshmallows too early (they still need more drying time), keep the cut marshmallows in the baking pan until fully dry. 
  • Store the marshmallows in an air-tight container or bag. I’ve found they are best stored in the freezer (a cool, dry place). They won’t freeze to a solid due to the gelatin, so they’re always ready to enjoy. The marshmallows should keep in the freezer for up to 3 months, or on the counter (or fridge) for a couple of weeks. 

Notes

*Arrowroot Starch and Powdered Sugar: If you want super sweet marshmallows, go with the powdered sugar and arrowroot mixture. At this point, I just use arrowroot flour starch and skip the powdered sugar. I find the marshmallows are plenty sweet with just the maple syrup. If you don't want to use arrowroot, or can't find it, use organic cornstarch.
I know, a candy thermometer is a speciality tool, and you'll probably never use this tool again (if you're like me). Well, except to make more marshmallows. This thermometer is very important. Without one, it's difficult to know when the maple syrup mixture has reached the correct temperature.
Homemade marshmallows melt much faster than store-bought marshmallows. We have made s'mores with these marshmallows, but they can be finicky and melt quickly over a very hot flame. It's best to toast them for a short period of time over low heat. They will also slowly melt in a hot drink. These are also delicious to eat as a candy treat.
